Following an impressive 12 month renovation project and £2.9m investment, family-owned, Cheshire-based hotel group Nelson Hotels have finally announced the opening of their newest property – The Fishpool Inn.

This dramatic yet sympathetic transformation of the former quaint country property, now a delectable gastro pub, will see that The Fishpool meets the standards of Nelson Hotels other three, first-class properties – The Grosvenor Pulford Hotel & Spa near Chester, The Bear’s Paw in Warmingham, and The Pheasant Inn in Higher Burwardsey. The Fishpool will also be providing a welcome boost to the local economy, through the creation of approximately 50 new jobs.

As part of the works, the new oak framed sandstone extension to the original building will allow the number of covers to more than double from 60 to around 150. Beer and local real ales will be kept in optimum condition thanks to the development of a new cellar nine feet underground. The outside area has been beautifully landscaped with more than 300 additional trees, plants and shrubs planted to enhance the grounds and provide a picturesque beer garden.

To the delight of diners, this charming inn will boast the high standards of food that the hotel group prides itself upon with fresh, seasonal, locally sourced produce taking pride of place on the hearty menus. The Fishpool Inn will feature exciting yet traditional styles of cookery in an open display kitchen, allowing diners to watch the chefs work their magic on a wide range of traditional home comforts and modern British and European dishes. Two particularly significant additions to the state of the art kitchen will be the Spanish Inka charcoal oven which allows for healthier, oil free cooking and the Woodstone oven providing diners with culinary treats such as hand-crafted pies, pizzas and flatbreads.

The Fishpool Inn also promises to be a great venue for local residents of the area, with real ales from local breweries taking centre stage at the bar. Real ale aficionados are sure to approve of the fine condition and taste of all beers and ales, thanks to carefully considered storage in the new cellar.

In addition, the scenic terrace will become an al fresco haven during the warmer months. Customers will be pleased to discover the dog training school has remained in situ and will benefit from a new office in the form of a quaint log cabin.

The family friendly gastropub will be open seven days a week serving food from midday through to 10pm.
