We recently introduced a new feature to our newsletter (you can sign up at the top of the page!) where our Head Chef, Mark Brooks, shares with you his current favourite dish, whilst another member of our staff offer their Drink of the Month!

For this Dish of the Month, Mark has chosen “Slow roasted pork belly, apricot and sage stuffing, crackling shards, fondant potato, French peas and pancetta, red wine reduction.”

He says: “with the nights drawing in it’s the perfect balance of summer meeting autumn, not too heavy a dish, with the sweetness of the apples and apricots.”

Our Drink of the Month is one of our own team’s creation. Jack, our new bar supervisor, dreamt up ‘The Fishpool Fruit Salad’ but, before you get excited, it doesn’t really count as one of your five a day! Jack explains, “It’s a modern twist on a childhood favourite retro sweet, the fruit salad chew. Blending Amaretto, Southern Comfort, freshly squeezed lime and a dash of orange juice. Once blended a dash of grenadine is added for a two tone effect. It looks and tastes fantastic!”
